Balsamic Vinegar

The History of Balsamic Although probably discovered by accident, traditional balsamic vinegar has long been treasured as the perfect healing tonic for external and internal well being--so much so that in medieval times this “liquid gold” was presented to royalty as gifts. Balsamic vinegar is a reduction made from grapes, but it is not considered a wine vinegar because the grape juice used is unfermented. The unfermented white sweet grape juice that is used is called “must” and comes from Trebbiano grapes.
